- 1 cup granulated sugar
- 1 tsp baking powder
- 1/4 tsp salt
- 1/2 cup unsalted butter (melted)
- 2 large eggs (room temperature)
- Zest of 2 fresh lemons
- 1/4 cup fresh lemon juice
- Powdered sugar for dusting
Instructions
- Preheat your oven to 350°F (175°C) and grease an 8×8-inch baking pan or line it with parchment paper.
- In a medium bowl, whisk together flour, baking powder, and salt until well combined.
- In another bowl, melt the butter and mix in granulated sugar until blended. Add eggs one at a time followed by lemon zest and juice.
- Gradually fold the dry ingredients into the wet mixture using a rubber spatula until just combined; avoid overmixing.
- Pour the batter into the prepared pan and spread evenly. Bake for 20-25 minutes until a toothpick comes out clean but moist.
- Allow to cool completely before dusting with powdered sugar and cutting into squares.
