Description

Ingredients

  • 1 cup granulated sugar
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsalted butter (melted)
  • 2 large eggs (room temperature)
  • Zest of 2 fresh lemons
  • 1/4 cup fresh lemon juice
  • Powdered sugar for dusting

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8×8-inch baking pan or line it with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, and salt until well combined.
  3. In another bowl, melt the butter and mix in granulated sugar until blended. Add eggs one at a time followed by lemon zest and juice.
  4. Gradually fold the dry ingredients into the wet mixture using a rubber spatula until just combined; avoid overmixing.
  5. Pour the batter into the prepared pan and spread evenly. Bake for 20-25 minutes until a toothpick comes out clean but moist.
  6. Allow to cool completely before dusting with powdered sugar and cutting into squares.
