- 2 lbs beef (chuck or brisket), cut into cubes
- 4 large tomatoes, blended or chopped
- 1 large onion, chopped
- 4 tablespoons vegetable oil
- 2–3 Scotch bonnet peppers (to taste)
- 1 tablespoon ground crayfish (optional)
- 2 teaspoons thyme
- 1 tablespoon curry powder
- 2–3 cups beef stock (or water)
- Salt, to taste
- Fresh basil or parsley for garnish
Instructions
- Gather all ingredients and chop the vegetables to save time during cooking.
- In a large pot or Dutch oven, heat vegetable oil over medium heat.
- Add chopped onions and sauté until translucent, about 3-5 minutes.
- Add beef cubes to the pot and brown on all sides for about 5-7 minutes.
- Stir in curry powder and thyme, cooking for an additional minute.
- While the beef is browning, blend tomatoes and Scotch bonnet peppers until smooth.
- Pour the blended tomato mixture over the browned beef.
- Pour in beef stock or water until the meat is just covered.
- Allow the stew to simmer uncovered on low heat for 30-40 minutes, stirring occasionally.
- Ensure the beef becomes tender, and add salt and ground crayfish to taste.
- Once cooked, remove from heat and garnish with fresh basil or parsley.
