Delicious and soft Red Velvet Cookies coated in powdered sugar.
Ingredients

- 1 3/4 cups all-purpose flour
- 1/4 cup unsweetened cocoa powder
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 1/4 cup brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 tablespoon red food coloring
- 1/2 cup powdered sugar
Instructions
- Preheat the oven to 350°F and line two baking sheets with parchment paper.
- In a medium bowl, whisk together the flour, cocoa powder, baking powder, and salt.
- In a large bowl, beat the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in the eggs one at a time, then mix in the vanilla extract and red food coloring until smooth.
- Add the dry ingredients to the wet mixture and stir just until a soft dough forms.
- Cover the bowl and chill the dough for 20 to 30 minutes so it is easier to roll.
- Scoop the dough into small balls, then coat each one generously in powdered sugar.
- Place the dough balls on the prepared baking sheets a few inches apart.
- Bake for 10 to 12 minutes, or until the tops are crackled and the edges are set.
- Let the cookies cool on the pan for 5 minutes, then transfer them to a wire rack to cool completely.
