Ingredients

- 500 ml heavy cream
- 100 ml whole milk
- 80 g granulated sugar
- 1 vanilla bean
- 7 g powdered gelatin
- 2 tbsp cold water
- fresh berries for serving
- mint leaves for garnish
Instructions
- Sprinkle powdered gelatin over cold water in a small bowl and let it bloom for 5 minutes.
- Split the vanilla bean lengthwise and scrape out the seeds.
- In a saucepan, combine heavy cream, whole milk, granulated sugar, vanilla seeds, and the vanilla pod.
- Heat the mixture over medium heat, stirring until the sugar dissolves and it just begins to simmer. Do not boil.
- Remove the saucepan from heat, discard the vanilla pod, and whisk in the bloomed gelatin until fully dissolved.
- Strain the mixture through a fine mesh sieve into a jug to remove any lumps.
- Pour the strained mixture into lightly oiled ramekins or molds and let them cool to room temperature.
- Cover and refrigerate for at least 4 hours or until set.
- To serve, dip the molds briefly in warm water, invert onto plates, and garnish with fresh berries and mint leaves.

- This dessert can be made a day in advance for an easy entertaining option.
- Feel free to experiment with different flavors, such as using citrus zest or coffee.
