Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 16 ounces potato gnocchi
  • 3 cups fresh spinach
  • 1 medium onion
  • 2 carrots
  • 2 celery stalks
  • 3 cloves garlic

Instructions

  1. In a large pot, heat olive oil over medium heat and cook seasoned chicken until browned (5-7 minutes). Remove and set aside.
  2. Sauté chopped onions, diced carrots, and celery until tender (about 5 minutes), then add minced garlic for another 30 seconds.
  3. Pour in chicken broth and bring to a simmer; return the chicken to the pot along with heavy cream and nutmeg.
  4. Add gnocchi and cook until they float to the top (approximately 3-5 minutes).
  5. Stir in chopped spinach and cook until wilted (about 2 minutes).
  6. Serve warm, garnished with fresh parsley.
