- 1 pound boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 4 cups chicken broth
- 1 cup heavy cream
- 16 ounces potato gnocchi
- 3 cups fresh spinach
- 1 medium onion
- 2 carrots
- 2 celery stalks
- 3 cloves garlic
Instructions
- In a large pot, heat olive oil over medium heat and cook seasoned chicken until browned (5-7 minutes). Remove and set aside.
- Sauté chopped onions, diced carrots, and celery until tender (about 5 minutes), then add minced garlic for another 30 seconds.
- Pour in chicken broth and bring to a simmer; return the chicken to the pot along with heavy cream and nutmeg.
- Add gnocchi and cook until they float to the top (approximately 3-5 minutes).
- Stir in chopped spinach and cook until wilted (about 2 minutes).
- Serve warm, garnished with fresh parsley.
Notes
- This soup can be made ahead and stored in the refrigerator for up to 3 days.
- For a spicier kick, add a pinch of red pepper flakes.
