Description
This tender and flavorful chuck roast is cooked with pepperoncini peppers, au jus, and ranch dressing for a delicious, easy meal.

- 3–4 lbs chuck roast
- 1 jar (12 oz) pepperoncini peppers
- 1 packet (1 oz) au jus gravy mix
- 1 packet (1 oz) ranch dressing mix
- 1 cup low-sodium beef broth
- 1 tbsp butter
Instructions
- Preheat your slow cooker or Dutch oven.
- Sear the chuck roast in a skillet over medium-high heat until golden brown, about 3-4 minutes per side.
- Place the seared roast in the slow cooker or Dutch oven. Sprinkle ranch dressing and au jus gravy mix over the top.
- Add pepperoncini peppers and their juice, then pour beef broth around the roast until halfway submerged.
- Cover and cook on low for 8 hours or high for 4 hours (or in an oven at 275°F for 5-6 hours).
- Stir in butter before serving to enhance richness.
Notes
- For extra flavor, you can add garlic and onion to the slow cooker.
- Serve with mashed potatoes or over rice for a complete meal.
