- 3 ripe bananas, mashed
- ½ cup granulated sugar
- ⅓ cup melted butter
- 1 large egg, beaten
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- Pinch of salt
- 1 teaspoon ground cinnamon (optional)
- 1 ½ cups all-purpose flour
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it lightly.
- In a mixing bowl, mash the ripe bananas with a fork until smooth.
- Stir in melted butter into the mashed bananas until well combined.
- Add the beaten egg and vanilla extract, mixing until the ingredients are thoroughly combined.
- Sprinkle the baking soda and a pinch of salt into the mixture, stirring well.
- If you desire, add ground cinnamon for additional warmth and flavor.
- Gradually fold in the all-purpose flour until the batter comes together. Do not overmix; small lumps are fine.
- Evenly distribute the batter into the prepared muffin tin, filling each cup about two-thirds full.
- Place the muffin tin in the oven and bake for 20-25 minutes, or until a toothpick inserted in the center comes out clean.
- Remove the muffins from the oven and let them cool in the tin for about 10 minutes. Then, transfer them to a wire rack to cool completely.
Notes
- These muffins are best enjoyed fresh but can be stored in an airtight container for a few days.
- Feel free to add nuts or chocolate chips for extra flavor!
