Description

Delicious and chewy peanut butter oatmeal cookies loaded with caramel and chocolate chips.


Ingredients

  • 1/2 cup butter (softened)
  • 1 cup brown sugar
  • 1 cup peanut butter (creamy or crunchy)
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 1/4 cup all purpose flour
  • 1 cup old fashioned oats
  • 1 teaspoon baking soda
  • 1/2 teaspoon kosher salt (plus more for sprinkling over baked cookies)
  • 11 ounces caramel bits
  • 1 cup semi-sweet chocolate chips (plus more for topping cookies if desired)

Instructions

  1. Preheat oven to 375°F.
  2. Add butter, peanut butter and brown sugar to bowl and beat with an electric mixer for 2 minutes.
  3. Next, add eggs and vanilla, mixing until combined.
  4. Add flour, oats, baking soda and salt, mix thoroughly.
  5. Mix in the chocolate chips and caramel bits until well combined.
  6. Use a medium cookie scoop and place dough 2 inches apart on a greased or parchment lined baking sheet.
  7. Mash cookies with a fork crosswise if you like flatter cookies or keep in rounds if you would like fatter cookies.
  8. Bake for 10-12 minutes or just until edges are lightly browned.
  9. Press extra chocolate chips into each cookie and sprinkle with a bit of salt if desired.
  10. Cool cookies on baking sheet for 2 minutes then move to a wire rack to cool completely.
