Description
Delicious baked salmon fillets topped with a flavorful garlic lemon butter and fresh herbs.
Ingredients

- 4 salmon fillets (about 6 ounces each, skin on)
- 1 tablespoon melted butter
- 1 tablespoon olive oil
- zest of 1 medium lemon
- juice of 1/2 medium lemon
- 3 cloves garlic (minced)
- ½ teaspoon kosher salt (or ¼ teaspoon table salt)
- ground black pepper (to taste)
- chopped fresh herbs (such as dill, parsley, thyme or chives, for serving)
Instructions
- Preheat oven to 425° F. Line a 9×13-inch baking dish with a sheet of parchment paper (for easy clean up).
- Place the salmon fillets in the baking dish and pat dry with paper towels. Set aside to allow the salmon to come to room temperature for about 15 minutes.
- Meanwhile, in a small bowl whisk together the melted butter, olive oil, lemon zest, lemon juice, garlic, salt and pepper. Brush the mixture over the tops and sides of the salmon fillets.
- Bake for 12-20 minutes, or until the salmon is cooked to your liking. (Thicker pieces of salmon may take longer.) When it’s done, the salmon should flake easily with a fork. (The USDA recommends an internal temperature of 145° F for salmon, but some prefer it cooked to 125-130° F, then rest for 3 minutes before serving.)
- Sprinkle with the chopped fresh herbs and serve.
