Ingredients

  • 3/4 cup granulated sugar
  • 3 large eggs
  • 1/2 cup vegetable oil (or melted butter)
  • 1 1/2 cups all-purpose flour
  • 2 tsp baking powder
  • Zest of 1 lemon or orange
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Grease a loaf pan.
  2. In a bowl, mix yogurt, sugar, eggs, oil, lemon zest, and vanilla until smooth.
  3. In another bowl, whisk flour and baking powder together.
  4. Gradually combine the dry ingredients into the wet mixture until just mixed.
  5. Pour batter into the prepared pan and smooth the top.
  6. Bake for 40-45 minutes or until golden brown and a toothpick inserted comes out clean.
  7. Cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
