This creamy penne pasta bake combines roasted red peppers and cheese for a comforting dish.

- 8 oz penne pasta
- 1 cup roasted red peppers (jarred or homemade)
- 4 oz cream cheese
- 1 cup shredded mozzarella cheese
- 3 cloves garlic, minced
- 1 tsp Italian seasoning
- 1 cup chicken broth (or vegetable broth)
Instructions
- Preheat the oven to 375°F (190°C) and spray a large baking dish with nonstick cooking spray.
- Cook the penne pasta in salted boiling water according to package instructions until al dente. Drain and set aside.
- In a blender, combine roasted red peppers, cream cheese, garlic, Italian seasoning, and chicken broth. Blend until smooth.
- In the prepared baking dish, mix the cooked pasta with the sauce until well coated. Top with shredded mozzarella cheese.
- Bake for 25–30 minutes or until golden and bubbly. Allow cooling slightly before serving.
Notes
- This dish can be made ahead and refrigerated before baking.
- Feel free to add cooked chicken or vegetables for extra flavor.
