Description

This creamy penne pasta bake combines roasted red peppers and cheese for a comforting dish.


Ingredients

  • 8 oz penne pasta
  • 1 cup roasted red peppers (jarred or homemade)
  • 4 oz cream cheese
  • 1 cup shredded mozzarella cheese
  • 3 cloves garlic, minced
  • 1 tsp Italian seasoning
  • 1 cup chicken broth (or vegetable broth)

Instructions

  1. Preheat the oven to 375°F (190°C) and spray a large baking dish with nonstick cooking spray.
  2. Cook the penne pasta in salted boiling water according to package instructions until al dente. Drain and set aside.
  3. In a blender, combine roasted red peppers, cream cheese, garlic, Italian seasoning, and chicken broth. Blend until smooth.
  4. In the prepared baking dish, mix the cooked pasta with the sauce until well coated. Top with shredded mozzarella cheese.
  5. Bake for 25–30 minutes or until golden and bubbly. Allow cooling slightly before serving.
