- 200 grams rice noodles
- 2 tablespoons vegetable oil
- 1 pound ground chicken
- 3 cloves garlic minced
- 1 tablespoon ginger minced
- 1 red bell pepper sliced
- 1 carrot julienned
- 3 green onions sliced
- 3 tablespoons sweet chili sauce
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 teaspoon sesame oil
- salt to taste
- black pepper to taste
Instructions
- Cook rice noodles according to package instructions until tender, then drain and rinse under cold water.
- Heat vegetable oil in a large skillet or wok over medium-high heat, then add garlic and ginger and stir-fry for about 30 seconds until fragrant.
- Add ground chicken and cook, breaking it up with a spatula, until browned and cooked through, about 5 minutes; season with salt and black pepper.
- Stir in red bell pepper and carrot and cook for 2 to 3 minutes until vegetables are tender-crisp.
- Add cooked rice noodles, sweet chili sauce, soy sauce, rice vinegar, and sesame oil; toss until noodles are evenly coated and heated through.
- Stir in most of the green onions, reserving a few for garnish.
- Divide among plates and garnish with remaining green onions.
Notes
- This dish can be customized with other vegetables or proteins as desired.
- For a vegetarian version, use tofu instead of chicken and adjust the sauces accordingly.
