Description
A delicious bowl of chicken and vegetables served over grains.
Ingredients

- 3 boneless, skinless chicken breasts (about 1 lbs)
- 1 cup fresh bell peppers (diced)
- 1 cup broccoli florets (fresh or frozen)
- 1 cup brown rice or quinoa (uncooked)
- 2 tablespoons olive oil
- 2 teaspoons cumin
- 2 teaspoons paprika
- 2 tablespoons soy sauce or tamari
- 2 green onions (sliced)
- 1 tablespoon sesame oil
- Juice of 1 lime
Instructions
- Prepare the grains according to package instructions.
- While the grains cook, wash and chop the vegetables.
- Heat olive oil in a skillet over medium heat. Season chicken with salt, pepper, cumin, and paprika, then add to the skillet.
- Cook chicken for about 6-7 minutes per side until golden brown.
- Add bell peppers and broccoli to the skillet and sauté until slightly tender.
- Pour in soy sauce and sesame oil; simmer for an additional 3-5 minutes.
- Fluff the cooked grains and serve in bowls topped with chicken, veggies, and garnished with green onions.
Notes
- This dish can be served with quinoa or brown rice for a healthier option.
- Feel free to add other vegetables based on your preference.
