Description

A delicious bowl of chicken and vegetables served over grains.


Ingredients

  • 3 boneless, skinless chicken breasts (about 1 lbs)
  • 1 cup fresh bell peppers (diced)
  • 1 cup broccoli florets (fresh or frozen)
  • 1 cup brown rice or quinoa (uncooked)
  • 2 tablespoons olive oil
  • 2 teaspoons cumin
  • 2 teaspoons paprika
  • 2 tablespoons soy sauce or tamari
  • 2 green onions (sliced)
  • 1 tablespoon sesame oil
  • Juice of 1 lime

Instructions

  1. Prepare the grains according to package instructions.
  2. While the grains cook, wash and chop the vegetables.
  3. Heat olive oil in a skillet over medium heat. Season chicken with salt, pepper, cumin, and paprika, then add to the skillet.
  4. Cook chicken for about 6-7 minutes per side until golden brown.
  5. Add bell peppers and broccoli to the skillet and sauté until slightly tender.
  6. Pour in soy sauce and sesame oil; simmer for an additional 3-5 minutes.
  7. Fluff the cooked grains and serve in bowls topped with chicken, veggies, and garnished with green onions.

Notes

  • This dish can be served with quinoa or brown rice for a healthier option.
