Description

A hearty and flavorful Italian soup featuring Johnsonville Italian sausages, cheese tortellini, and fresh spinach.


Ingredients

Scale
  • 5 Johnsonville Italian Mild Sausages
  • 23 Tablespoons olive oil
  • 1 small onion, (diced)
  • 23 teaspoons minced garlic
  • 1 1/2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 Tablespoon Italian seasoning
  • 2 (15 ounce) cans white beans (do not drain or rinse)
  • 15 ounce can fire roasted diced tomatoes with garlic
  • 32 ounce carton chicken stock
  • 20 ounce package refrigerated cheese tortellini
  • 1/2 cup heavy cream
  • 5 ounces baby spinach (optional)

Instructions

  1. Cook sausages in Johnsonville grill – slice when finished cooking. UPDATED TO ADD: Since the grill featured in this article is no longer available to purchase, you can simply brown the sausages according to the package directions (in a skillet.)
  2. In a large pot over medium heat, heat oil. Add onion and cook, stirring, until soft, about 5 minutes.
  3. Add in minced garlic and cook for an additional minute. Season with salt, pepper and Italian seasoning.
  4. Stir in white beans, diced tomatoes, and chicken stock.
  5. Bring to a gentle boil and add tortellini and sliced sausages. Reduce heat to medium-low and simmer until tortellini is cooked and flavors start to meld, 18 to 20 minutes.
  6. Stir in heavy cream, cook for an additional 5 minutes.
  7. Finally, stir in spinach and cook until spinach has wilted, about 2-3 minutes.
  8. Taste-test soup for any additional seasoning (careful – it’s hot!) and add in additional salt, pepper or Italian seasoning, if necessary.
  9. Serve with freshly grated Parmesan cheese.

Notes

  • This soup is perfect for a cozy night and can be reheated for leftovers.
  • Feel free to add more vegetables like carrots or celery for extra flavor.
