Description
A hearty and flavorful Italian soup featuring Johnsonville Italian sausages, cheese tortellini, and fresh spinach.

- 5 Johnsonville Italian Mild Sausages
- 2–3 Tablespoons olive oil
- 1 small onion, (diced)
- 2–3 teaspoons minced garlic
- 1 1/2 teaspoons salt
- 1 teaspoon black pepper
- 1 Tablespoon Italian seasoning
- 2 (15 ounce) cans white beans (do not drain or rinse)
- 15 ounce can fire roasted diced tomatoes with garlic
- 32 ounce carton chicken stock
- 20 ounce package refrigerated cheese tortellini
- 1/2 cup heavy cream
- 5 ounces baby spinach (optional)
Instructions
- Cook sausages in Johnsonville grill – slice when finished cooking. UPDATED TO ADD: Since the grill featured in this article is no longer available to purchase, you can simply brown the sausages according to the package directions (in a skillet.)
- In a large pot over medium heat, heat oil. Add onion and cook, stirring, until soft, about 5 minutes.
- Add in minced garlic and cook for an additional minute. Season with salt, pepper and Italian seasoning.
- Stir in white beans, diced tomatoes, and chicken stock.
- Bring to a gentle boil and add tortellini and sliced sausages. Reduce heat to medium-low and simmer until tortellini is cooked and flavors start to meld, 18 to 20 minutes.
- Stir in heavy cream, cook for an additional 5 minutes.
- Finally, stir in spinach and cook until spinach has wilted, about 2-3 minutes.
- Taste-test soup for any additional seasoning (careful – it’s hot!) and add in additional salt, pepper or Italian seasoning, if necessary.
- Serve with freshly grated Parmesan cheese.
Notes
- This soup is perfect for a cozy night and can be reheated for leftovers.
- Feel free to add more vegetables like carrots or celery for extra flavor.
