Description

A deliciously creamy pasta dish featuring salmon fillets, fettuccine, and garlic.


Ingredients

  • 4 pieces (about 6 oz each) salmon fillets
  • 12 oz fettuccine pasta
  • 1 cup heavy cream
  • 1 cup Parmesan cheese, grated
  • 4 cloves garlic, minced
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 2 tbsp lemon juice
  • 2 tbsp fresh parsley, chopped

  • optional red pepper flakes, for garnish

Instructions

  1. Cook the Pasta: In a large pot, bring salted water to a boil. Add the fettuccine pasta and cook according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of pasta water.
  2. Prepare the Salmon: Season the salmon fillets with salt and black pepper. Heat olive oil in a large skillet over medium-high heat. Sear the salmon, skin side up, for about 4-5 minutes until golden brown. Flip the salmon and cook for another 4 minutes until fully cooked. Remove from the skillet and set aside.
  3. Make the Creamy Garlic Sauce: In the same skillet, reduce heat to medium. Add butter and let it melt, then add minced garlic. Sauté until fragrant, about 1 minute. Pour in heavy cream and bring to a gentle simmer. Stir in Parmesan cheese until melted and smooth. Add lemon juice and season with salt and pepper to taste. If the sauce is too thick, use reserved pasta water to adjust consistency.
  4. Combine and Serve: Add the cooked fettuccine to the skillet with the creamy sauce, tossing to coat the pasta evenly. Place the salmon fillets on top of the pasta. Garnish with freshly chopped parsley and a sprinkle of red pepper flakes if desired.

Notes

  • For an extra burst of flavor, add a splash of white wine to the sauce before adding the cream.
  • Ensure the skillet is hot before adding the salmon to achieve a nice sear.
