Pie Crust Cookies

Description

A delightful pie crust cookies recipe with a sprinkle of cinnamon and a sweet icing drizzle.


Ingredients

Scale
  • 1 pie crust
  • Cinnamon to taste
  • Sugar to taste
  • 1/4 Cup butter (Melted)
  • 3 Tbsp Powdered Sugar
  • Water as needed

Instructions

  1. Make the pie crust as indicated in recipe here.
  2. Roll crust out into a rectangular shape (make 2).
  3. Brush crust with melted butter. Do not put too much on as crust will not absorb it the way other doughs would.
  4. Sprinkle with sugar and cinnamon.
  5. Roll into a long tube.
  6. Slice cookies about 1/2 inch thick and place on cookie sheet.
  7. Bake at 425° for 15-18 minutes, or until golden brown.
  8. Add powdered sugar to a bowl, mix in small amounts of water until the desired consistency is reached. It should be thick, but thin enough to drizzle.
  9. Drizzle icing over cookies and allow it to harden.

Notes

  • These cookies are best enjoyed fresh out of the oven.
  • Adjust the sweetness of the icing to your preference.
