Description
A delicious chocolate cake with caramel and pecans that is perfect for any occasion.
Ingredients
Scale
- 1 ¾ cups all-purpose flour
- 1 ½ cups granulated sugar
- ¾ cup unsweetened cocoa powder
- 1 ½ teaspoons baking powder
- 1 ½ teaspoons baking soda
- ½ teaspoon salt
- 2 large eggs
- 1 cup buttermilk
- ½ cup vegetable oil
- 2 teaspoons vanilla extract
- 1 cup boiling water
- 1 cup caramel sauce
- 1 cup chopped pecans (toasted)
- 1 cup semi-sweet chocolate chips
- 1 tablespoon butter (for the glaze)
Instructions
- Set your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a large mixing bowl, combine flour, sugar, cocoa powder, baking powder, baking soda, and salt. Whisk together until thoroughly mixed.
- In another bowl, whisk the eggs, buttermilk, oil, and vanilla extract together.
- Gradually mix the wet ingredients into the dry mixture. Stir until well combined.
- Slowly add boiling water to the batter, mixing until no lumps remain. The batter will be thin; this is normal.
- Divide the batter evenly between the prepared cake pans.
- Place in the oven and bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
- Remove cakes from the oven and allow them to cool in the pans for about 15 minutes before transferring them to wire racks to cool completely.
- Once cooled, take one layer of the cake and place it on a serving platter. Top with half of the caramel sauce and half of the toasted pecans.
- Place the second cake layer on top of the first, coating it with the remaining caramel sauce and pecans.
- In a small saucepan over low heat, melt butter and chocolate chips, stirring until smooth. Once melted, remove from heat and drizzle the glaze over the top of the cake.
- Allow the glaze to set before slicing.
Notes
- Store any leftovers in an airtight container at room temperature for up to 3 days.
- For a richer flavor, consider using dark cocoa powder instead of regular cocoa powder.
