Description

A delicious chocolate cake with caramel and pecans that is perfect for any occasion.


Ingredients

  • 1 ¾ cups all-purpose flour
  • 1 ½ cups granulated sugar
  • ¾ cup unsweetened cocoa powder
  • 1 ½ teaspoons baking powder
  • 1 ½ teaspoons baking soda
  • ½ teaspoon salt
  • 2 large eggs
  • 1 cup buttermilk
  • ½ cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 1 cup caramel sauce
  • 1 cup chopped pecans (toasted)
  • 1 cup semi-sweet chocolate chips
  • 1 tablespoon butter (for the glaze)

Instructions

  1. Set your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large mixing bowl, combine flour, sugar, cocoa powder, baking powder, baking soda, and salt. Whisk together until thoroughly mixed.
  3. In another bowl, whisk the eggs, buttermilk, oil, and vanilla extract together.
  4. Gradually mix the wet ingredients into the dry mixture. Stir until well combined.
  5. Slowly add boiling water to the batter, mixing until no lumps remain. The batter will be thin; this is normal.
  6. Divide the batter evenly between the prepared cake pans.
  7. Place in the oven and bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  8. Remove cakes from the oven and allow them to cool in the pans for about 15 minutes before transferring them to wire racks to cool completely.
  9. Once cooled, take one layer of the cake and place it on a serving platter. Top with half of the caramel sauce and half of the toasted pecans.
  10. Place the second cake layer on top of the first, coating it with the remaining caramel sauce and pecans.
  11. In a small saucepan over low heat, melt butter and chocolate chips, stirring until smooth. Once melted, remove from heat and drizzle the glaze over the top of the cake.
  12. Allow the glaze to set before slicing.

Notes

  • Store any leftovers in an airtight container at room temperature for up to 3 days.
  • For a richer flavor, consider using dark cocoa powder instead of regular cocoa powder.
