- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup enchilada sauce
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 8 small flour tortillas
- 2 cups shredded cheddar cheese
- Fresh cilantro, for garnish (optional)
- Salt and pepper, to taste

Prepare the Beef Mixture:
- Heat olive oil in a large skillet over medium heat.
- Add chopped onion and garlic, sauté until fragrant and soft.
- Add ground beef, cooking until browned. Drain excess fat.
- Stir in enchilada sauce, chili powder, and cumin.
- Season with salt and pepper to taste. Simmer for 5 minutes.

Assemble the Enchilada Squares:
- Preheat your oven to 375°F (190°C).
- On a baking tray, lay out the tortillas.
- Spoon the beef mixture onto each tortilla, spreading evenly.
- Fold the sides of each tortilla over the filling to form a square.
- Top with shredded cheddar cheese.

- Bake for 10-15 minutes, or until the cheese is melted and bubbly.
