- 1 cup pizza sauce

- ½ cup grated Parmesan cheese
- 1 cup pepperoni slices (or any preferred toppings)
- 1 tsp dried Italian herbs (basil, oregano)
- Olive oil for brushing
- Flour for dusting
Instructions
- Prepare the Dough:
- In a large mixing bowl, combine flour, yeast, sugar, and salt.
- Add olive oil and warm water, mixing until a dough forms.
- Knead the dough on a floured surface for about 5 minutes until smooth and elastic.
- Place the dough in a lightly oiled bowl, cover, and let rise in a warm place for about 1 hour or until doubled in size.
- Preheat and Prep:
- Preheat your oven to 375°F (190°C).
- Line a baking sheet with parchment paper.
- Assemble the Pizza Pockets:
- Punch down the risen dough and divide it into 8 equal portions.
- Roll each portion into a small rectangle on a floured surface.
- Spread a tablespoon of pizza sauce on one half of the rectangle.
- Top with mozzarella cheese, Parmesan cheese, and pepperoni.
- Sprinkle with dried Italian herbs for extra flavor.
- Fold and Seal:
- Fold the dough over the filling to form a pocket and crimp the edges with a fork to seal.
- Place the pockets on the prepared baking sheet.
- Bake:
- Brush the tops with olive oil.
- Bake for 15-20 minutes or until golden brown and cheese is bubbly.

- For a crispy crust, bake directly on a pizza stone if available.
- Add more toppings like mushrooms, bell peppers, or olives as desired.
