Instructions

  1. Prepare the Dough:
    • In a large mixing bowl, combine flour, yeast, sugar, and salt.
    • Add olive oil and warm water, mixing until a dough forms.
    • Knead the dough on a floured surface for about 5 minutes until smooth and elastic.
    • Place the dough in a lightly oiled bowl, cover, and let rise in a warm place for about 1 hour or until doubled in size.
  2. Preheat and Prep:
    • Preheat your oven to 375°F (190°C).
    • Line a baking sheet with parchment paper.
  3. Assemble the Pizza Pockets:
    • Punch down the risen dough and divide it into 8 equal portions.
    • Roll each portion into a small rectangle on a floured surface.
    • Spread a tablespoon of pizza sauce on one half of the rectangle.
    • Top with mozzarella cheese, Parmesan cheese, and pepperoni.
    • Sprinkle with dried Italian herbs for extra flavor.
  4. Fold and Seal:
    • Fold the dough over the filling to form a pocket and crimp the edges with a fork to seal.
    • Place the pockets on the prepared baking sheet.
