A flavorful dish featuring tender beef liver paired with sweet caramelized onions.

- 300g beef liver
- 2 large yellow onions, thinly sliced
- 2 tablespoons butter
- 1 tablespoon olive oil
- 2 garlic cloves, minced
- 1 teaspoon fresh thyme leaves
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon balsamic vinegar
- 1 tablespoon all-purpose flour (optional)
Instructions
- Trim any connective tissue from the liver slices and pat them dry. If desired, soak them in milk for 30–60 minutes to reduce bitterness. Drain and lightly dust with flour.
- In a large skillet over medium-low heat, melt butter and olive oil. Add sliced onions and a pinch of salt. Cook for 20–25 minutes until deeply caramelized. Remove and set aside.
- Raise heat to medium-high. Add liver slices in a single layer and sear for 1 to 2 minutes per side. Do not overcook.
- Lower heat to medium. Add garlic and thyme to the skillet, sauté for 30 seconds. Deglaze with balsamic vinegar, scraping up browned bits.
- Return caramelized onions to the pan. Simmer together for 2–3 minutes. Adjust seasoning and serve hot with your favorite side.
Notes
- If soaking liver in milk, it helps reduce bitterness and enhances flavor.
- Ensure not to overcook the liver as it can become tough.
