Description
Delicious dark chocolate cookies that are soft in the center and crunchy on the edges.
Ingredients

- 170g dark chocolate (70% cocoa or higher)
- 85g unsalted butter
- 100g granulated sugar
- 50g brown sugar
- 2 large eggs
- 1 tsp vanilla extract
- 65g all-purpose flour
- 15g cocoa powder
- 1/2 tsp baking powder
- 1/4 tsp salt
- Flaky sea salt for topping
Instructions
- In a heatproof bowl, melt the chopped dark chocolate and butter over simmering water or in the microwave. Stir until smooth and set aside to cool slightly.
- In a large bowl, beat the granulated sugar, brown sugar, and eggs on high speed for 3–5 minutes until pale and fluffy.
- Slowly add in the melted chocolate mixture along with the vanilla extract. Mix on low until fully incorporated.
- In a separate bowl, whisk together the flour, cocoa powder, baking powder, and salt.
- Fold the dry mixture into the wet ingredients using a spatula. The batter will resemble thick brownie batter.
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- Scoop the batter using a tablespoon or cookie scoop and place 2 inches apart on the baking sheet.
- Sprinkle each cookie with flaky sea salt.
- Bake for 10–12 minutes, or until edges are set and centers are still soft.
- Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack.
Notes
- Storing cookies in an airtight container will help maintain their freshness.
- For a chewier texture, underbake slightly.
