Instructions

  1. Prepare the Crust: Preheat the oven to 350°F (175°C). In a medium bowl, combine graham cracker crumbs, melted butter, and sugar. Mix until crumbly. Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for 10 minutes, then allow to cool completely.
  2. Make the Cheesecake Filling: Blend blueberries and blueberry syrup in a food processor until smooth. In a large mixing bowl, beat the cream cheese until fluffy. Gradually add sugar, salt, lemon juice, and vanilla extract, mixing until smooth. Add the blueberry mixture and mix well. In a separate bowl, whip the heavy cream until stiff peaks form, then fold into the cream cheese mixture.
  3. Assemble the Cheesecake: Pour the cheesecake filling onto the cooled crust and spread evenly. Refrigerate for at least 4 hours, or until fully set.
  4. Add the Topping: Once set, pour the blueberry glaze over the cheesecake, allowing it to drip over the edges. Decorate with fresh raspberries and edible blue flowers.
