Ingredients

  • 1/4 cup cocoa powder (unsweetened)
  • 1/2 cup sticky sweetener (like maple syrup or keto-friendly syrup such as allulose)

Instructions

  1. Blend the Dry Ingredients – Start by adding the almonds to a high-speed blender or food processor. Pulse until they break down into a coarse flour or meal. You’re looking for a texture that’s fine enough to bind, but not so processed that it turns into almond butter.
  2. Add Cocoa Powder and Sweetener – Next, add the unsweetened cocoa powder and sticky sweetener of your choice. Blend again until a sticky dough forms. Depending on the sweetener you use, you may need to scrape down the sides a couple of times to ensure everything combines evenly. If the dough is too dry, add a tiny splash of water or an extra spoonful of syrup to help it bind. If it’s too wet, a few more ground almonds or a touch more cocoa will bring it back to balance.
  3. Shape and Chill – Use your hands or a small cookie scoop to roll the dough into bite-sized balls. You can make them as small or large as you like—mine are usually about the size of a ping pong ball. Place them on a parchment-lined tray and refrigerate for at least 20 minutes to firm up.
