- 2 tbsp granulated sugar
- 1 cup white chocolate chips or chopped white chocolate
- ½ cup heavy cream (for ganache)

Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C). Grease and flour an 8-inch round cake pan.
- Prepare the Cake Batter: In a bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, then add vanilla extract. In another bowl, whisk together flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, alternating with milk. Mix until just combined.
- Raspberry Layer: In a small bowl, toss the raspberries with 2 tbsp of sugar. Gently fold the raspberries into the cake batter along with the white chocolate chips.
- Bake: Pour the batter into the prepared cake pan. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean. Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
- White Chocolate Ganache: In a saucepan, heat the heavy cream until it just begins to simmer. Remove from heat and add the remaining white chocolate, stirring until smooth and melted. Let it cool slightly before pouring over the cooled cake.
- Assemble: Pour the white chocolate ganache over the cooled cake, letting it drip down the sides. Decorate with fresh raspberries on top. Garnish with shaved white chocolate.
