A delicious and healthy egg bake made with sweet potatoes, spinach, and cheese.
Ingredients

- 2 medium sweet potatoes (about 2 cups, diced)
- 6 large eggs
- 1 cup whole milk (or dairy alternative)
- 1 cup shredded sharp cheddar cheese
- 2 cups fresh spinach
- 1 medium onion (diced)
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C) and spray a baking dish with nonstick cooking spray.
- Peel and dice sweet potatoes into bite-sized pieces; season with salt and pepper and spread in the baking dish.
- Sauté the diced onion in a skillet over medium heat until translucent (about 5 minutes). Add spinach until wilted, then combine with sweet potatoes.
- In a bowl, whisk together eggs and milk; season with salt and pepper.
- Pour the egg mixture over the sweet potato and veggie layer; stir gently to combine.
- Top with shredded cheddar cheese and bake for 30-35 minutes or until set and golden brown.
Notes
- This dish can be made ahead of time and refrigerated before baking.
- Feel free to add other vegetables or spices as desired.
