Description
This delicious strawberry vanilla cake combines a moist vanilla cake base with fresh strawberries and a creamy frosting, perfect for any occasion!

- 15 ounces vanilla cake mix
- 3 ounces strawberry gelatin mix (Jell-O)
- 4 large eggs
- 1 cup vegetable oil
- 1/4 cup water
- 1 pint fresh strawberries, or 1 cup crushed fresh strawberries
- 4 ounces cream cheese, softened
- 1/3 cup butter, softened
- 2 cups powdered sugar
- 1 teaspoon vanilla extract
- 1 Tablespoon milk
Instructions
- Preheat oven to 350F degrees. Spray a 9×13-inch baking dish with nonstick cooking spray.
- Rinse the strawberries, dry them gently with a paper towel, remove the stems, and dice.
- Put the strawberries into a plastic Ziploc bag and crush them using a rolling pin or other heavy object until smushed.
- In a bowl, combine the cake mix with the strawberry gelatin powder and mix until combined.
- Stir in the oil, eggs, and water.
- Once combined, add in 1 cup of the crushed strawberries and gently stir by hand.
- Pour the batter into the prepared baking dish.
- Bake for about 30-33 minutes. To check if done, stick a toothpick in the center; if it comes out clean, it’s ready.
- Allow the cake to cool completely before adding frosting.
- Using an electric mixer, mix together the softened butter and softened cream cheese until smooth and lump-free.
- Mix in the powdered sugar, vanilla extract, and milk until smooth and creamy.
- Slather the frosting onto the cooled cake and refrigerate for about an hour to help the frosting set up.
- Slice and serve, topping each piece with a slice of fresh strawberry.
Notes
- This cake is best served chilled.
- For a stronger strawberry flavor, use more fresh strawberries in the batter.
