Description

This delicious strawberry vanilla cake combines a moist vanilla cake base with fresh strawberries and a creamy frosting, perfect for any occasion!


Ingredients

  • 15 ounces vanilla cake mix
  • 3 ounces strawberry gelatin mix (Jell-O)
  • 4 large eggs
  • 1 cup vegetable oil
  • 1/4 cup water
  • 1 pint fresh strawberries, or 1 cup crushed fresh strawberries
  • 4 ounces cream cheese, softened
  • 1/3 cup butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1 Tablespoon milk

Instructions

  1. Preheat oven to 350F degrees. Spray a 9×13-inch baking dish with nonstick cooking spray.
  2. Rinse the strawberries, dry them gently with a paper towel, remove the stems, and dice.
  3. Put the strawberries into a plastic Ziploc bag and crush them using a rolling pin or other heavy object until smushed.
  4. In a bowl, combine the cake mix with the strawberry gelatin powder and mix until combined.
  5. Stir in the oil, eggs, and water.
  6. Once combined, add in 1 cup of the crushed strawberries and gently stir by hand.
  7. Pour the batter into the prepared baking dish.
  8. Bake for about 30-33 minutes. To check if done, stick a toothpick in the center; if it comes out clean, it’s ready.
  9. Allow the cake to cool completely before adding frosting.
  10. Using an electric mixer, mix together the softened butter and softened cream cheese until smooth and lump-free.
  11. Mix in the powdered sugar, vanilla extract, and milk until smooth and creamy.
  12. Slather the frosting onto the cooled cake and refrigerate for about an hour to help the frosting set up.
  13. Slice and serve, topping each piece with a slice of fresh strawberry.

Notes

  • This cake is best served chilled.
  • For a stronger strawberry flavor, use more fresh strawberries in the batter.
