Description

A sweet and tart cherry pie filling that can be used for pies, tarts, or topped on desserts.


Ingredients

Scale
  • 1 cup cherries (pitted)
  • 2 tablespoons sugar
  • 1 tablespoon lemon juice
  • ½ tablespoon cornstarch
  • 2 tablespoons water

Instructions

  1. Add the cherries, sugar, lemon juice, cornstarch, and water to a 1 quart saucepan. Stir until the cornstarch is fully dissolved.
  2. Place the saucepan over medium heat and cook, stirring frequently, until the mixture comes to a boil.
  3. Reduce the heat to low and simmer for about 5 minutes, stirring occasionally, until the cherries soften and the filling thickens and coats the back of a spoon.
  4. Remove from the heat and let the cherry pie filling cool to room temperature. It will continue to thicken as it cools.
  5. Transfer to a jar or bowl and refrigerate until ready to use covered in the refrigerator for up to one week.

Notes

  • For a thicker filling, you can increase the amount of cornstarch.
  • Try adding a pinch of cinnamon or almond extract for extra flavor.
