Ingredients

- 4 chicken thighs or breasts
- 1 cup rice (white or brown)
- 2 cups chicken broth
- 1 lemon (juiced and zested)
- 2 teaspoons dried oregano
- 2 teaspoons dried thyme
- 1 onion (chopped)
- 2 cloves garlic (minced)
- Salt and pepper to taste
- Fresh herbs for garnish (optional)
Instructions
- In a slow cooker, place the chopped onion and minced garlic at the bottom.
- Next, add the chicken thighs or breasts right on top of the aromatic mixture.
- Pour in the chicken broth, along with the lemon juice and zest.
- Sprinkle the dried oregano, thyme, along with some salt and pepper over the chicken.
- Carefully add the rice on top of the chicken and herbs.
- Cover the slow cooker and cook on low for 4-6 hours, or until the chicken is cooked through and the rice is tender.
- Once cooking time is up, fluff the rice with a fork before serving and garnish with fresh herbs if desired.
Notes
- For best results, use bone-in, skin-on chicken for added flavor.
- Feel free to add vegetables like carrots or peas for extra nutrition.
