Description

A delicious and easy slow cooker chicken and rice recipe, perfect for busy days.


Ingredients

Scale
  • 4 chicken thighs or breasts
  • 1 cup rice (white or brown)
  • 2 cups chicken broth
  • 1 lemon (juiced and zested)
  • 2 teaspoons dried oregano
  • 2 teaspoons dried thyme
  • 1 onion (chopped)
  • 2 cloves garlic (minced)
  • Salt and pepper to taste
  • Fresh herbs for garnish (optional)

Instructions

  1. In a slow cooker, place the chopped onion and minced garlic at the bottom.
  2. Next, add the chicken thighs or breasts right on top of the aromatic mixture.
  3. Pour in the chicken broth, along with the lemon juice and zest.
  4. Sprinkle the dried oregano, thyme, along with some salt and pepper over the chicken.
  5. Carefully add the rice on top of the chicken and herbs.
  6. Cover the slow cooker and cook on low for 4-6 hours, or until the chicken is cooked through and the rice is tender.
  7. Once cooking time is up, fluff the rice with a fork before serving and garnish with fresh herbs if desired.

Notes

  • For best results, use bone-in, skin-on chicken for added flavor.
  • Feel free to add vegetables like carrots or peas for extra nutrition.
