A delicious and hearty enchilada bake featuring pepperoni and cheddar cheese.

- 8 small corn tortillas
- 2 cups shredded cheddar cheese
- 1 cup sliced pepperoni
- 1 pound ground beef
- 1 can (15 oz) enchilada sauce
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon chili powder

- 1 cup sour cream
- 1 cup diced tomatoes

Instructions
- Preheat Oven: Preheat your oven to 375°F (190°C).
- Cook the Beef: In a skillet over medium heat, sauté the onion and garlic until fragrant. Add ground beef, cumin, chili powder, salt, and pepper. Cook until beef is browned and cooked through. Drain excess fat.
- Prepare the Sauce: Stir in enchilada sauce to the beef mixture, and let it simmer for 5 minutes to blend flavors.
- Assemble the Enchiladas:
- Lightly grease a baking dish.
- Spread a small amount of beef mixture in the bottom.
- Fill each tortilla with some of the beef mixture and a sprinkle of cheese. Roll tightly and place seam-side down in the dish.
- Top the Enchiladas: Pour remaining beef and sauce mixture over the enchiladas. Top with remaining cheese and arrange pepperoni slices on top.
- Bake the Enchiladas: Cover with foil and bake for 20 minutes. Remove foil and bake for an additional 5-10 minutes, or until cheese is bubbly and golden.
- Garnish and Serve:
- Allow to cool slightly before serving.
- Top with dollops of sour cream, diced tomatoes, and fresh cilantro.
Notes
- For extra flavor, add some chopped jalapeños inside the enchiladas.
- Use a mix of cheeses like mozzarella or Monterey Jack for a different taste.
- Make it vegetarian by replacing beef with black beans or grilled vegetables.
- Serve with a side of Mexican rice or a fresh green salad for a complete meal.
