Description

A delightful and vibrant red velvet cupcake topped with creamy frosting and a cherry.

Ingredients

Scale
  • 1 1/4 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter (room temperature)
  • 1/2 cup buttermilk
  • 1 large egg
  • 1 tablespoon red food coloring
  • 1 teaspoon vanilla extract
  • 2 teaspoons cocoa powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon white vinegar
  • 8 oz cream cheese (room temperature)
  • 1/4 cup unsalted butter (room temperature)
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract (frosting)
  • Maraschino cherries (for decoration)

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Line a muffin tin with cupcake liners.
  2. Mix Dry Ingredients: In a bowl, sift together the flour, cocoa powder, baking soda, and salt.
  3. Cream Butter and Sugar: In a large bowl, beat the butter and sugar together until light and fluffy.
  4. Add Wet Ingredients: Beat in the egg, buttermilk, red food coloring, and vanilla extract to the butter mixture until combined.
  5. Combine Vinegar and Baking Soda: In a small bowl, mix the vinegar and baking soda. Add to the batter, mixing just until combined.
  6. Combine Wet and Dry Ingredients: Gradually mix the dry ingredients into the wet ingredients until smooth.
  7. Bake: Divide the batter evenly among the cupcake liners. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean. Allow the cupcakes to cool completely on a wire rack.
  8. Prepare Frosting: Beat the cream cheese and butter together until creamy. Gradually add the powdered sugar and vanilla extract, beating until smooth and fluffy.
  9. Decorate: Pipe the frosting onto the cooled cupcakes and top each with a maraschino cherry.

Notes

  • Ensure all ingredients are at room temperature for best results.
  • Don’t overmix the batter to keep the cupcakes light and fluffy.
  • Adjust the amount of red food coloring to achieve your desired shade.
  • For extra flavor, add a teaspoon of lemon zest to the frosting.
