Instructions

- Mix Dry Ingredients: In a bowl, sift together the flour, cocoa powder, baking soda, and salt.
- Cream Butter and Sugar: In a large bowl, beat the butter and sugar together until light and fluffy.
- Add Wet Ingredients: Beat in the egg, buttermilk, red food coloring, and vanilla extract to the butter mixture until combined.
- Combine Vinegar and Baking Soda: In a small bowl, mix the vinegar and baking soda. Add to the batter, mixing just until combined.

- Bake: Divide the batter evenly among the cupcake liners. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean. Allow the cupcakes to cool completely on a wire rack.
- Prepare Frosting: Beat the cream cheese and butter together until creamy. Gradually add the powdered sugar and vanilla extract, beating until smooth and fluffy.
- Decorate: Pipe the frosting onto the cooled cupcakes and top each with a maraschino cherry.
