A delicious twist on classic baked potatoes, loaded with cheese, bacon, and topped with sour cream and green onions.

- 6 medium russet potatoes
- 4 strips bacon
- 1 cup shredded cheddar cheese
- 1 cup sour cream
- 2 tablespoons melted butter
- 2 tablespoons olive oil

- 3 green onions, finely chopped
- 1 teaspoon garlic powder
- 1 tablespoon fresh chives, chopped (optional)
Instructions
- Preheat the Oven: Preheat your oven to 425°F (220°C).
- Prepare the Potatoes:
- Wash and scrub the potatoes thoroughly. Pat them dry.
- Place a potato on a cutting board. Use two wooden spoon handles on either side as guides to prevent cutting all the way through. Slice the potato into thin, even slices about 1/8 inch apart, stopping 1/4 inch from the bottom.
- Season the Potatoes:
- Place the sliced potatoes on a baking sheet.
- Brush each potato with a mixture of melted butter and olive oil. Make sure to get the mixture between the slices.
- Sprinkle with salt, black pepper, and garlic powder.
- Bake the Potatoes:
- Bake in the preheated oven for 45 minutes.
- Remove from the oven and sprinkle cheddar cheese over the top, making sure it gets between the slices, then bake for an additional 10 minutes until the cheese is melted and bubbly.
- Cook the Bacon:
- While the potatoes are baking, cook the bacon in a skillet over medium heat until crispy.
- Remove, drain on paper towels, and crumble once cooled.
- Add Toppings:
- Remove potatoes from the oven once tender and the cheese is melted.
- Top each potato with a dollop of sour cream, crumbled bacon, chopped green onions, and chives if desired.
Notes
- For extra flavor, try adding a pinch of cayenne pepper to the cheese before baking.
- Experiment with different cheeses such as mozzarella or Monterey Jack for variety.
- Ensure the potatoes are evenly sliced for uniform cooking.
- If you prefer softer potatoes, bake them covered with foil for the first 30 minutes.
