Ingredients

  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ¾ cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon lemon zest
  • 4 oz cream cheese, softened
  • ½ cup whole milk ricotta cheese
  • ¼ cup powdered sugar
  • ½ teaspoon vanilla extract
  • 1 teaspoon lemon zest
  • Optional: Extra lemon zest
  • Optional: Powdered sugar for dusting

Instructions

  1. In a medium bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt until evenly combined. Set the mixture aside.
  2. In a large mixing bowl, beat the softened butter and granulated sugar using a hand mixer or stand mixer for about 2–3 minutes until light and fluffy.
  3. Add the egg, vanilla extract, fresh lemon juice, and lemon zest to the butter mixture. Mix until smooth and creamy.
  4. Gradually add the dry ingredient mixture into the wet ingredients while mixing on low speed until a soft cookie dough forms.
  5. Cover the bowl and refrigerate the dough for 30 minutes.
  6. In a small bowl, combine the softened cream cheese, ricotta cheese, powdered sugar, vanilla extract, and lemon zest. Mix until smooth and creamy.
  7. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper. Scoop about 2 tablespoons of dough and roll into balls, pressing a small indentation in the center of each.
  8. Spoon about 1 teaspoon of the ricotta cheesecake filling into the indentation of each cookie.
  9. Bake for 12–14 minutes until lightly golden around the edges. Allow to cool on the baking sheet for 5 minutes before transferring to a wire rack.
  10. Once cooled, dust with powdered sugar or sprinkle with fresh lemon zest if desired.
