- 4 oz cream cheese, softened
- ½ cup whole milk ricotta cheese
- ¼ cup powdered sugar
- ½ teaspoon vanilla extract
- 1 teaspoon lemon zest
- Optional: Extra lemon zest
- Optional: Powdered sugar for dusting
Instructions
- In a medium bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt until evenly combined. Set the mixture aside.
- In a large mixing bowl, beat the softened butter and granulated sugar using a hand mixer or stand mixer for about 2–3 minutes until light and fluffy.
- Add the egg, vanilla extract, fresh lemon juice, and lemon zest to the butter mixture. Mix until smooth and creamy.
- Gradually add the dry ingredient mixture into the wet ingredients while mixing on low speed until a soft cookie dough forms.
- Cover the bowl and refrigerate the dough for 30 minutes.
- In a small bowl, combine the softened cream cheese, ricotta cheese, powdered sugar, vanilla extract, and lemon zest. Mix until smooth and creamy.
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper. Scoop about 2 tablespoons of dough and roll into balls, pressing a small indentation in the center of each.
- Spoon about 1 teaspoon of the ricotta cheesecake filling into the indentation of each cookie.
- Bake for 12–14 minutes until lightly golden around the edges. Allow to cool on the baking sheet for 5 minutes before transferring to a wire rack.
- Once cooled, dust with powdered sugar or sprinkle with fresh lemon zest if desired.
