Description

Ingredients

  • 150g dark chocolate
  • 150g white chocolate
  • 2 cups heavy cream
  • 1 tablespoon instant coffee powder
  • 1 tablespoon gelatin
  • 1/4 cup sugar
  • cocoa powder (for dusting)
  • 1 teaspoon vanilla extract
  • 1/4 cup water

Instructions

  1. Prepare the Gelatin: In a small bowl, mix gelatin with 1/4 cup of cold water. Let it bloom for about 5 minutes.
  2. Melt the Chocolate: Melt the dark chocolate in a heatproof bowl over simmering water, or microwave in 30-second increments, stirring until smooth. Repeat the process with the white chocolate in another bowl.
  3. Make the Coffee Layer: Heat 1/2 cup of cream in a saucepan until steaming. Add the instant coffee and 1 tablespoon of sugar, stirring until dissolved. Add half the bloomed gelatin and stir until fully dissolved. Fold half the melted dark chocolate into the coffee mixture. Let it cool slightly, then whip half of the remaining cream to soft peaks and fold in. Divide the coffee mousse into serving glasses, filling each about one-third full. Refrigerate to set.
  4. Make the White Chocolate Layer: Heat another 1/2 cup of cream and 1 tablespoon of sugar until steaming. Add the remaining gelatin and stir until dissolved. Mix with the melted white chocolate. Cool, then fold in half of the whipped cream. Pour over the set coffee layer and return to refrigerator.
  5. Make the Dark Chocolate Layer: Mix the remaining melted dark chocolate with 1/2 cup of cream, 1 tablespoon sugar, and vanilla extract. Cool slightly. Fold in the rest of the whipped cream. Pour over the set white chocolate layer.
  6. Set and Serve: Allow the mousse to set in the refrigerator for at least 2 hours. Before serving, dust with cocoa powder.
