Description

Delicious and easy cheesy beef enchiladas made with ground beef, spices, tortillas, and smothered in enchilada sauce and cheese.


Ingredients

  • 1 lb lean ground beef
  • 8 corn or flour tortillas
  • 2 cups enchilada sauce (store-bought or homemade)
  • 2 cups shredded cheese (cheddar and Monterey Jack blend)
  • 1 medium onion, diced
  • 2 tsp cumin
  • 2 tsp chili powder
  • 1 tbsp olive oil
  • Fresh cilantro (optional)

Instructions

  1. Prepare your ingredients by chopping the onion and measuring out the spices.
  2. Heat olive oil in a skillet over medium heat. Sauté the diced onions until translucent, about 5 minutes.
  3. Add ground beef, cumin, and chili powder to the skillet. Cook until browned, breaking it apart as it cooks.
  4. Spoon some beef mixture onto each tortilla, sprinkle with cheese, and roll tightly. Place seam-side down in a baking dish.
  5. Pour enchilada sauce over the rolled tortillas and top with remaining cheese. Bake at 350°F for about 20 minutes or until bubbly.
  6. Let cool for a few minutes before garnishing with cilantro if desired. Serve hot.
