Delicious and easy cheesy beef enchiladas made with ground beef, spices, tortillas, and smothered in enchilada sauce and cheese.

- 1 lb lean ground beef
- 8 corn or flour tortillas
- 2 cups enchilada sauce (store-bought or homemade)
- 2 cups shredded cheese (cheddar and Monterey Jack blend)
- 1 medium onion, diced
- 2 tsp cumin
- 2 tsp chili powder
- 1 tbsp olive oil
- Fresh cilantro (optional)
Instructions
- Prepare your ingredients by chopping the onion and measuring out the spices.
- Heat olive oil in a skillet over medium heat. Sauté the diced onions until translucent, about 5 minutes.
- Add ground beef, cumin, and chili powder to the skillet. Cook until browned, breaking it apart as it cooks.
- Spoon some beef mixture onto each tortilla, sprinkle with cheese, and roll tightly. Place seam-side down in a baking dish.
- Pour enchilada sauce over the rolled tortillas and top with remaining cheese. Bake at 350°F for about 20 minutes or until bubbly.
- Let cool for a few minutes before garnishing with cilantro if desired. Serve hot.
Notes
- These enchiladas can be customized with your favorite fillings or topped with sour cream.
- Make sure to use fresh tortillas for the best texture.
