Ingredients

  • 1 pound medium head of cauliflower, cut into florets
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 3 tablespoons tahini
  • 2 tablespoons lemon juice
  • 1 teaspoon garlic powder
  • Water (as needed)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, toss the cauliflower florets with olive oil, salt, pepper, and garlic powder until evenly coated.
  3. Spread the seasoned cauliflower on a baking sheet in a single layer and roast for about 25-30 minutes until golden brown and crispy.
  4. While roasting, whisk together tahini, lemon juice, water (to thin), salt, and pepper in a small bowl until smooth.
  5. Once roasted, let the cauliflower cool slightly before drizzling with tahini sauce.
