Description

This delicious oven-baked honey mustard chicken is paired with mixed fresh vegetables, making for a healthy and flavorful meal.


Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 1/3 cup honey
  • 1/4 cup Dijon mustard
  • 2 tbsp extra virgin olive oil
  • 2 cups mixed fresh vegetables (carrots, bell peppers, broccoli)
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, mix honey, Dijon mustard, olive oil, garlic powder, salt, and pepper. Toss in chicken breasts until fully coated.
  3. Chop vegetables into bite-sized pieces and toss with olive oil, salt, and pepper.
  4. Arrange chicken in the center of the baking sheet and scatter vegetables around it.
  5. Bake for 25-30 minutes until chicken reaches an internal temperature of 165°F (74°C) and veggies are tender.
  6. Let rest for 5 minutes before serving.
