Ingredients

- 3 cups all-purpose flour
- 1 tsp ground ginger
- 1 tsp cinnamon
- 1/4 cup molasses
- 1 tsp baking soda
- 1/2 cup unsalted butter (softened)
- 1/2 cup granulated sugar
- 1 large egg
Instructions
- Prepare your workspace by gathering all ingredients and tools.
- In a large bowl, whisk together flour, ginger, cinnamon, baking soda, and salt.
- In another bowl, cream softened butter and sugar until light and fluffy.
- Add egg and molasses; mix until well combined.
- Gradually incorporate dry ingredients into wet mixture until a dough forms; knead gently if needed.
- Wrap in plastic wrap and refrigerate for at least one hour.
- Preheat oven to 350°F (175°C).
- Roll out chilled dough to 1/4 inch thick; cut shapes using cookie cutters.
- Place on parchment-lined baking sheets and bake for 8–10 minutes or until edges are lightly browned.
- Cool before decorating.
Notes
- If the dough is too sticky, add a little more flour when rolling out.
- These cookies can be decorated with icing or candies after cooling.
