Instructions
- In a small bowl or mason jar, combine lemon juice, honey, Dijon mustard, garlic, salt, and black pepper.
- Slowly drizzle in the olive oil while whisking continuously until the mixture emulsifies and thickens.
- Taste and adjust seasoning—add more honey for sweetness or more lemon juice for tanginess.
- Store in an airtight glass jar in the refrigerator for up to 7 days. Shake or whisk before each use.
