Description

Delicious muffins made with rolled oats and fresh peaches, perfect for a healthy snack or breakfast.


Ingredients

Scale
  • 2 cups rolled oats
  • 2 tsp baking powder
  • 1/4 cup raw cane sugar
  • 1/4 cup honey
  • 1 stick (1/2 cup) organic, grass-fed butter, softened
  • 3/4 cup plain greek yogurt
  • 1 egg
  • 1 cup chopped peaches (about 2 peaches)

Instructions

  1. Preheat oven to 350 degrees.
  2. Blend the rolled oats into a flour texture.
  3. Add in the baking powder and raw cane sugar and lightly blend.
  4. Add in the honey, softened butter, greek yogurt, and egg.
  5. Blend on a dough setting or mix by hand until the batter is smooth.
  6. Add in the chopped peaches and mix by hand.
  7. Pour the batter into an oiled muffin pan and bake for 45 minutes on the top rack (or until a toothpick comes out clean).
  8. Serve and enjoy!

Notes

  • For added flavor, consider adding a pinch of cinnamon to the batter.
  • These muffins can be stored in an airtight container for up to 3 days.
