- 1 medium delicata squash
- 2 medium Honeycrisp apples, cored and sliced
- 2 tablespoons fresh sage leaves, chopped
- 3 tablespoons olive oil
- ½ teaspoon sea salt
- ¼ teaspoon freshly cracked black pepper
Instructions
- Preheat your oven to 400°F (200°C).
- Halve the delicata squash lengthwise and scoop out the seeds. Slice into half-moons about ½ inch thick.
- In a large bowl, combine the sliced squash, apple wedges, olive oil, salt, pepper, and chopped sage. Toss until well coated.
- Spread the mixture evenly on a baking sheet lined with parchment paper.
- Roast in the preheated oven for 25-30 minutes or until golden brown and tender.
- Serve warm as a delightful side dish.
