Description

A delightful side dish featuring roasted delicata squash and Honeycrisp apples, enhanced with fresh sage.


Ingredients

  • 1 medium delicata squash
  • 2 medium Honeycrisp apples, cored and sliced
  • 2 tablespoons fresh sage leaves, chopped
  • 3 tablespoons olive oil
  • ½ teaspoon sea salt
  • ¼ teaspoon freshly cracked black pepper

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Halve the delicata squash lengthwise and scoop out the seeds. Slice into half-moons about ½ inch thick.
  3. In a large bowl, combine the sliced squash, apple wedges, olive oil, salt, pepper, and chopped sage. Toss until well coated.
  4. Spread the mixture evenly on a baking sheet lined with parchment paper.
  5. Roast in the preheated oven for 25-30 minutes or until golden brown and tender.
