  • 1 cup Almond or Hazelnut Flour (Gluten-free flour is a great alternative.)
  • 2 cups All-Purpose Flour (Use whole wheat flour for a nuttier taste.)
  • 1 tsp Baker’s Ammonia (Substitute with baking soda if necessary.)
  • 1/2 tsp Salt (Sea salt enhances overall flavor.)
  • 1 tbsp Spices (e.g., cinnamon, ginger, nutmeg) (Adjust to taste.)

Instructions

  1. In a stand mixer, beat brown sugar and butter until pale and fluffy—this should take about 5-6 minutes.
  2. Incorporate the egg yolks, heavy cream, vanilla extract, and lemon zest into your butter-sugar mixture.
  3. Blend the all-purpose flour, almond or hazelnut flour, baker’s ammonia, salt, and your chosen spices in another bowl.
  4. Gradually mix this dry blend into the wet mix, stirring gently until combined.
  5. If the dough seems too dry, add an extra egg yolk until smooth. Shape it into a ball and wrap in plastic wrap.
  6. Rest the dough in a cool place for at least 5 hours—preferably overnight.
  7. Roll out the chilled dough to approximately 4mm thickness on a floured surface. Use cookie cutters to create shapes.
  8. Place the shapes in the fridge for at least one hour.
  9. Preheat your oven to 375°F (190°C). Bake the cut-outs for 10-12 minutes until browned.
  10. Allow the cookies to cool on a wire rack and store in an airtight container.
