- 1/2 tsp Salt (Sea salt enhances overall flavor.)
- 1 tbsp Spices (e.g., cinnamon, ginger, nutmeg) (Adjust to taste.)
Instructions
- In a stand mixer, beat brown sugar and butter until pale and fluffy—this should take about 5-6 minutes.
- Incorporate the egg yolks, heavy cream, vanilla extract, and lemon zest into your butter-sugar mixture.
- Blend the all-purpose flour, almond or hazelnut flour, baker’s ammonia, salt, and your chosen spices in another bowl.
- Gradually mix this dry blend into the wet mix, stirring gently until combined.
- If the dough seems too dry, add an extra egg yolk until smooth. Shape it into a ball and wrap in plastic wrap.
- Rest the dough in a cool place for at least 5 hours—preferably overnight.
- Roll out the chilled dough to approximately 4mm thickness on a floured surface. Use cookie cutters to create shapes.
- Place the shapes in the fridge for at least one hour.
- Preheat your oven to 375°F (190°C). Bake the cut-outs for 10-12 minutes until browned.
- Allow the cookies to cool on a wire rack and store in an airtight container.
