Description

Delicious chicken thighs marinated in soy sauce and coconut vinegar, perfect for serving over rice or alongside crusty bread.


Ingredients

  • 2 lbs boneless, skinless chicken thighs
  • 1/4 cup low-sodium soy sauce
  • 1/4 cup coconut vinegar
  • 6 cloves fresh garlic, crushed
  • 1 medium onion, chopped
  • 1 tsp black peppercorns
  • 2 bay leaves
  • 1 cup water
  • 2 tbsp cooking oil

Instructions

  1. Marinate chicken thighs in soy sauce and crushed garlic for at least 30 minutes.
  2. Heat oil in a large skillet over medium heat; sauté chopped onions until translucent.
  3. Add marinated chicken to the skillet; brown on both sides for about 5 minutes each.
  4. Pour in coconut vinegar and water; add bay leaves and peppercorns. Bring to a gentle boil, then reduce heat.
  5. Cover and simmer on low for 30-40 minutes until chicken is tender.
  6. Serve hot over rice or with crusty bread.
