- 20 large marshmallows
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 2 tablespoons granulated sugar
- 1/2 teaspoon salt
- 1 cup milk
- 1 large egg
- 1 teaspoon vanilla extract
- Vegetable oil for frying
- Powdered sugar for dusting
Instructions
- Prepare the batter – Start by whisking together the flour, baking powder, sugar, and salt in a mixing bowl. In a separate bowl, combine the milk, egg, and vanilla extract. Slowly pour the wet ingredients into the dry mixture while whisking until a smooth batter forms. The batter should be thick enough to coat the marshmallows completely. This coating is what gives deep fried marshmallows their signature crisp shell.
- Heat the oil – Pour vegetable oil into a deep saucepan or fryer until it reaches about 2–3 inches deep. Heat the oil to 350°F (175°C). Maintaining the right temperature ensures the outside becomes crisp while the inside melts perfectly.
- Coat the marshmallows – Using a fork or toothpick, dip each marshmallow into the batter, making sure it’s fully coated. Let any excess batter drip off before placing it into the hot oil.
- Fry until golden – Carefully drop the coated marshmallows into the hot oil. Fry them for about 30–45 seconds, turning occasionally, until they puff slightly and turn golden brown. You’ll notice the batter crisping quickly while the marshmallow inside softens into a warm, gooey center.
- Drain and dust – Remove the fried marshmallows using a slotted spoon and place them on a plate lined with paper towels to absorb excess oil. While still warm, lightly dust them with powdered sugar. Serve immediately for the best texture and flavor.
