- Prepare the Batter: In a bowl, sift together the flour, cocoa powder, baking powder, and salt. In a separate large bowl, beat the eggs and granulated sugar with an electric mixer on high speed for about 5-7 minutes, until thick and pale. Gently fold the dry ingredients into the wet ingredients until just combined. Stir in the melted butter and vanilla extract.
- Bake the Cake: Pour the batter into the prepared pan, spreading evenly with a spatula. Bake for 12-15 minutes, or until the cake springs back when lightly touched. Once baked, sprinkle a clean kitchen towel with powdered sugar and carefully invert the cake onto the towel. Peel off the parchment paper and roll the cake up in the towel. Let it cool completely.
- Prepare the Filling: In a medium bowl, beat the heavy cream, powdered sugar, and vanilla extract until stiff peaks form. Carefully unroll the cooled cake and spread the filling evenly over the surface. Roll the cake back up without the towel.
- Prepare the Ganache: Heat the cream in a saucepan until simmering. Pour over the chopped chocolate and let it sit for 5 minutes. Stir until smooth. Allow the ganache to cool slightly before pouring over the rolled cake.
- Chill and Serve: Chill the cake in the refrigerator for at least an hour before slicing. The ganache should set, and the flavors will meld beautifully.
