In a separate bowl, whisk together eggs, milk, oil, and vanilla extract. Gradually mix the wet ingredients into the dry ingredients until smooth. Pour the batter into greased muffin tins or a baking tray. Bake for 18-20 minutes or until a toothpick inserted comes out clean. Allow to cool completely.
- Make the Whipped Cream: In a chilled bowl, beat heavy cream, powdered sugar, and vanilla extract until soft peaks form.
- Assemble the Dessert Cups: Cut cooled cake into small pieces and layer at the bottom of dessert cups. Pipe or spoon the whipped cream on top of the cake layer. Drizzle melted chocolate over the whipped cream. Top each cup with a chocolate truffle.
