Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Line a 15×10 inch jelly roll pan with parchment paper.
  2. Chocolate Sponge Cake: Sift together flour, cocoa powder, and baking powder in a bowl. In a separate bowl, beat eggs, sugar, and vanilla extract at high speed until thick and pale. Gently fold in the dry ingredients and salt until just combined. Pour the batter into the prepared pan, spreading it evenly. Bake for 10-12 minutes, or until the cake springs back when lightly touched.
  3. Roll Cake: While the cake is still warm, carefully roll it up with the parchment paper from the short side. Allow it to cool completely on a wire rack.
  4. Prepare Filling: Whip the heavy cream with powdered sugar and vanilla extract until stiff peaks form. Set aside 1/2 cup for topping.
  5. Assemble: Unroll the cooled cake and spread the whipped cream evenly over the surface. Sprinkle cherries evenly on top of the cream. Carefully roll the cake back up, peeling away the parchment paper as you go.
  6. Decorate: Spread or pipe the reserved whipped cream on top. Decorate with chocolate shavings and extra cherries. Chill the cake roll in the refrigerator for at least 1 hour before serving.
