- 12 small corn tortillas
- 1/2 cup sour cream (for garnish)

- Cooking spray or oil
- 1/4 teaspoon chili powder (optional)
- 1/4 teaspoon garlic powder (optional)
- Salt to taste
Instructions
- Preheat Oven: Preheat your oven to 400°F (200°C).
- Prepare the Filling: Mix the shredded cheese with chili powder and garlic powder in a bowl for added flavor (optional).
- Warm the Tortillas: Warm the tortillas in the microwave for about 20-30 seconds or until they are soft and pliable. This will prevent them from cracking when rolled.
- Assemble the Taquitos: Place a small handful of cheese near one edge of each tortilla. Roll the tortilla tightly around the cheese and secure with a toothpick if necessary.
- Bake the Taquitos: Place the rolled taquitos seam-side down on a baking sheet lined with parchment paper. Lightly spray or brush the tops with cooking spray or oil. Bake for 15-20 minutes or until they become golden brown and crispy.
- Serve: Remove the toothpicks and serve hot with a dollop of sour cream and a sprinkle of chopped cilantro.
Notes
- For extra crunch, sprinkle a little cheese on top of the taquitos before baking.
- If you prefer, you can fry the taquitos instead of baking them for a different texture. Heat oil in a pan and fry until golden brown.
- Experiment with different cheeses or add fillings like cooked chicken or beans for variety.
