Description

Delicious crispy cheese taquitos that are perfect for a snack or appetizer.

Ingredients

Scale
  • 2 cups shredded cheese (cheddar, Monterey Jack, or a blend)
  • 12 small corn tortillas
  • 1/2 cup sour cream (for garnish)
  • 1/4 cup chopped fresh cilantro (for garnish)
  • Cooking spray or oil
  • 1/4 teaspoon chili powder (optional)
  • 1/4 teaspoon garlic powder (optional)
  • Salt to taste

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C).
  2. Prepare the Filling: Mix the shredded cheese with chili powder and garlic powder in a bowl for added flavor (optional).
  3. Warm the Tortillas: Warm the tortillas in the microwave for about 20-30 seconds or until they are soft and pliable. This will prevent them from cracking when rolled.
  4. Assemble the Taquitos: Place a small handful of cheese near one edge of each tortilla. Roll the tortilla tightly around the cheese and secure with a toothpick if necessary.
  5. Bake the Taquitos: Place the rolled taquitos seam-side down on a baking sheet lined with parchment paper. Lightly spray or brush the tops with cooking spray or oil. Bake for 15-20 minutes or until they become golden brown and crispy.
  6. Serve: Remove the toothpicks and serve hot with a dollop of sour cream and a sprinkle of chopped cilantro.

Notes

  • For extra crunch, sprinkle a little cheese on top of the taquitos before baking.
  • If you prefer, you can fry the taquitos instead of baking them for a different texture. Heat oil in a pan and fry until golden brown.
  • Experiment with different cheeses or add fillings like cooked chicken or beans for variety.
  • Serve with additional toppings like guacamole or salsa for more flavor.
