Description
This moist and delicious banana bread is perfect for breakfast or as a snack.
Ingredients

- 2 cups (400g) all-purpose flour
- 1 teaspoon (5g) baking soda
- 1/2 teaspoon (2g) salt
- 1/2 cup (115g) unsalted butter, softened
- 1 cup (200g) granulated sugar
- 2 large eggs
- 1 teaspoon (5ml) vanilla extract
- 1/4 cup (60ml) milk
- 3 ripe bananas, mashed (about 1 1/2 cups or 340g)
- 1/4 cup (50g) granulated sugar
- 1 tablespoon (7g) ground cinnamon
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
- In a medium bowl, whisk together flour, baking soda, and salt.
- In a large bowl, cream butter and sugar until light and fluffy. Beat in eggs one at a time, then stir in vanilla extract.
- Mix in mashed bananas and milk until combined.
- Gradually add the dry ingredients to the wet ingredients, mixing just until incorporated. Do not overmix.
- In a small bowl, mix 1/4 cup sugar and 1 tablespoon cinnamon for the swirl.
- Pour half of the batter into the prepared pan. Sprinkle half of the cinnamon-sugar mixture over the batter. Add the remaining batter, then top with the rest of the cinnamon-sugar mixture. Use a knife to gently swirl the mixture through the batter.
- Bake for 55-65 minutes, or until a toothpick inserted into the center comes out clean.
- Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
Notes
- Make sure the bananas are very ripe for the best flavor.
- This bread can be frozen for later enjoyment.
