Description

This moist and delicious banana bread is perfect for breakfast or as a snack.


Ingredients

Scale
  • 2 cups (400g) all-purpose flour
  • 1 teaspoon (5g) baking soda
  • 1/2 teaspoon (2g) salt
  • 1/2 cup (115g) unsalted butter, softened
  • 1 cup (200g) granulated sugar
  • 2 large eggs
  • 1 teaspoon (5ml) vanilla extract
  • 1/4 cup (60ml) milk
  • 3 ripe bananas, mashed (about 1 1/2 cups or 340g)
  • 1/4 cup (50g) granulated sugar
  • 1 tablespoon (7g) ground cinnamon

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
  2. In a medium bowl, whisk together flour, baking soda, and salt.
  3. In a large bowl, cream butter and sugar until light and fluffy. Beat in eggs one at a time, then stir in vanilla extract.
  4. Mix in mashed bananas and milk until combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing just until incorporated. Do not overmix.
  6. In a small bowl, mix 1/4 cup sugar and 1 tablespoon cinnamon for the swirl.
  7. Pour half of the batter into the prepared pan. Sprinkle half of the cinnamon-sugar mixture over the batter. Add the remaining batter, then top with the rest of the cinnamon-sugar mixture. Use a knife to gently swirl the mixture through the batter.
  8. Bake for 55-65 minutes, or until a toothpick inserted into the center comes out clean.
  9. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

  • Make sure the bananas are very ripe for the best flavor.
  • This bread can be frozen for later enjoyment.
